If you read my post about Tomato Chicken, then this recipe will sound very similar! Even though they are both extremely easy with only a few ingredients, they are completely different in flavor. What they do have in common, though, is that they both are super, super easy. (If you haven’t read about Tomato Chicken yet, click here to read all about it.)
So, where to begin with mushroom chicken? This is one of the first crockpot/slow cooker meals I ever learned to make. I have never been the biggest fan of mushrooms, though. They honestly don’t appeal to me on the textural standpoint. I do really enjoy their flavor, though. I guess they are a lot like onions for me in that way. Over time, I have adjusted ingredients to add just a little more to the chicken, such as putting in onion soup mix (it is one of my go-to secret ingredients when I make savory dishes).
Crockpot meals are something we have in my household at least twice a week. With a toddler running around, I do not always know if I will have time to get everything ready in the hour before dinnertime. Having something that I can throw together quickly in the morning or during D’s nap is perfect. I seriously love my crockpot!
The mushroom chicken starts with basic pantry ingredients. There is very little prep work too! The flavorful, moist chicken will appeal to even your pickiest eaters, and the dish can be paired with tons of side dishes. I usually serve it with rice and vegetables, but a salad, mashed potatoes, etc. would all be delicious. It is a family favorite that works any night of the week!
Mushroom Chicken
Equipment
- Crockpot or Slow cooker
Ingredients
- 4 chicken breasts
- 1 can cream of mushroom soup
- 1 cup milk
- 1 packet onion soup mix
Instructions
- Spray the crockpot with non-stick spray.
- Place the chicken breasts in the crockpot.
- In a medium bowl, combine the cream of mushroom soup, milk, and onion soup mix. Mix well.
- Pour the soup mixture over the chicken in the crockpot.
- Place the lid on the crockpot and cook the chicken for 4 to 5 hours on low.
Notes
- Adding additional fresh, sliced mushrooms or canned mushrooms works well in this recipe. Please note that you may want to use less milk, water, or broth since the mushrooms will add additional liquid to the sauce and make it thinner.
- Chicken broth may be substituted for the milk in this recipe.
