One of the biggest reasons I love using my crockpot is that I can literally dump ingredients for dinner in there in the morning, leave it to cook, and then do minimal work to make dinner a success later in the evening. I am always super happy with the time crockpot recipes save me in the long run, and it is so nice not worrying about getting dinner figured out while I stay busy with other things throughout the day. So, here is a great crockpot recipe for the summer – barbeque pulled chicken.
The first great thing about this recipe is that it is truly a “dump and go” recipe. There is hardly any upfront prep work – just throw the ingredients into the crockpot and let it do the rest of the work for you. Aside from a couple quick chops of the onion and lemon, there is not much to do. Then, you simply shred the chicken at the end of the cooking time. So easy!
The next amazing thing about the recipe is that it is super versitle. I use it for sandwiches and baked potatoes, but it would also make a great topping for pizza. For sandwiches, you simply stuff a sliced roll or bun with the chicken and any other toppings, and you are set! Serve with chips or a salad or fruit, and dinner will be a hit for sure!
This chicken is also delicious as a topping for baked potatoes! I do this with the leftovers (if there are any). I have recently discovered that leftovers get eaten more readily and quickly if I can repurpose them instead of simply creating the same meal (reheated) again. Just add your favorite toppings to a baked potato, and you have a yummy dinner for a second day that feels completely different from the sandwiches. Yum!
You will not miss the grill with this pulled chicken! It’s perfect at a potluck or picnic, or at a standard family dinner. And, the recipe can be doubled to feed a crowd! I hope your family enjoys this recipe as much as mine does!
BBQ Pulled Chicken
Ingredients
- 2 to 3 large chicken breasts
- 1 small onion, quartered
- 1 lemon, quartered
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ⅛ tsp pepper
- 1¼ cup barbeque sauce (I used Sweet Baby Ray's brand), plus more for topping
- 1½ cups Coke, or any other brand of cola soda
- rolls or buns (I used steak rolls) for sandwiches or baked potatoes and other toppings as desired
Instructions
- Spray the slow cooker with nonstick spray (you may consider using a liner for easier cleanup too).
- Put all of the ingredients, except the rolls/buns, in the slow cooker.
- Secure the lid on and cook on low for 7 to 8 hours.
- Remove the onion and lemon, and shred the chicken. Stir the chicken and remaining sauce to fully coat the chicken.
- Serve the chicken on sliced rolls or buns or on baked potatoes with additional barbeque sauce and any other toppings as desired.
