Spread the crescent dough out and pinch the serrated edges together if needed. (This is not needed if the crescent dough does not have the serrated lines.)
In a medium bowl, mix the chicken, ranch dressing, dressing mix, and spices.
Add ½ cup of the shredded cheese and mix well.
Spread the chicken mixture evenly over about he crescent dough lengthwise, leaving about an inch along one long side.
Carefully roll the crescent dough up lengthwise, starting on the side with the chicken mixture and ending with the side without the chicken mixture.
Pinch the seam together.
Cut the rolled up dough into eight equal pieces.
Place the pieces cut side up on the prepared pan, leaving about an inch between each piece.
Sprinkle the remaining ¼ cup of shredded cheese over each roll-up. This will be about ½ a tablespoon of cheese per roll-up.
Bake the roll-ups for 20 to 22 minutes, or until golden brown.
