Bacon Ranch Chicken Roll-Ups

Exactly when I discovered the combination of bacon, ranch, and chicken is a mystery, but I do know it was a big deal in my culinary world. I am a little hesitant to admit that I am not even a big fan of bacon. I know, I know… how is that even possible? I am pretty sure I am in the minority with that opinion. However, there is something about adding ranch and chicken (or turkey!) that completely changed my mind about bacon.

I have also been realizing just how versatile canned crescent dough is. You can make taco rings, sopapilla cheesecake, and so many other delectable dishes. So this week, I was experimenting with the concept of a crescent dough roll-up for dinner. It is similar to a savory cinnamon roll, as odd as that sounds.

You can buy sheets of crescent dough, but you can also just pinch the serrated edges of the original version together to get the same effect. I put mine on a baking sheet to make clean-up easier, but you can also do this directly on the countertop.

Using precooked chicken makes this a breeze too, making it a perfect time to use my shredded chicken (check out my tips and recipe for shredded chicken here). Then I included the flavors of bacon and ranch. Yummy!

Add cheddar cheese, and oh my goodness is this dish a real winner. Not to mention, this is a super fast and super easy weeknight meal. Everyone loved this at my house!

Ingredients

  • 1 can/sheet crescent dough
  • 2 cups chicken, cooked and shredded
  • 5 slices bacon, cooked
  • cup buttermilk ranch dressing
  • 1 tbsp ranch dressing mix
  • ½ tsp dried onion
  • ½ tsp dried chives
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ¾ cup shredded cheddar cheese, divided

Instructions

  • Preheat the oven to 400° and spray a 2 qt. or 7×11 baking dish with nonstick spray. Set the dish aside.
  • Spread the crescent dough out and pinch the serrated edges together if needed. (This is not needed if the crescent dough does not have the serrated lines.)
  • In a medium bowl, mix the chicken, ranch dressing, dressing mix, and spices.
  • Add ½ cup of the shredded cheese and mix well.
  • Spread the chicken mixture evenly over about he crescent dough lengthwise, leaving about an inch along one long side.
  • Carefully roll the crescent dough up lengthwise, starting on the side with the chicken mixture and ending with the side without the chicken mixture.
  • Pinch the seam together.
  • Cut the rolled up dough into eight equal pieces.
  • Place the pieces cut side up on the prepared pan, leaving about an inch between each piece.
  • Sprinkle the remaining ¼ cup of shredded cheese over each roll-up. This will be about ½ a tablespoon of cheese per roll-up.
  • Bake the roll-ups for 20 to 22 minutes, or until golden brown.
