If you have been following my recent posts, it’s probably no surprise to hear that I love all the fresh produce that is sold this time of year. Something about fresh, in-season products being sold in stores and in little stands by the side of the road this time of year is just so inspiring. I guess that’s why the whole farm-to-table concept is so popular!
One of my daughter’s favorite things this time of year is corn on the cob. She literally cannot get enough of it! It is one of the cutest things in the world – watching a sweet little toddler eat corn on the cob. I must say, I am always super impressed with how well she does. She loves it, it’s healthy, and it’s really fun to eat!
This year, as in years past, we got our freshly picked corn from a local farm. (If you can’t find corn from a local farm, grocery stores usually sell corn on the cob with the husks still on this time of year too.) D, my daughter, was absolutely amazed by it. She carefully watched me shuck the first ear of corn. Her curiosity about what I was doing was evident.
Before long, D was right next to me asking tons of questions. She was beyond excited when I asked her if she wanted to help. We stood over the kitchen trashcan (you could also do this outside to avoid most of the mess), and I loosened up the husks for my toddler before she put all her force into pulling the rest of it completely off. Pulling the corn silk (or “hair,” as she called it) was by far her favorite part. This is a fun way to involve kids in the kitchen!
We shucked about a dozen ears of corn, and saved out three to grill. The rest were put in ziplock bags and placed in the freezer for future meals.
Next, we laid out aluminum foil, placed corn on each one, and seasoned and buttered them. In my full recipe below, the amount of butter you can use varies. We originally used only half of a tablespoon, but I felt that it actually probably needed a full tablespoon. My husband, on the other hand, felt that half of a tablespoon was perfect. Either way, you can season them however you like and the amount of butter can be changed to your personal preferences too.
Carefully wrapping the foil around the corn is a crucial step. You don’t want any of the melted butter escaping – not only do you lose that yummy goodness, but it could also cause flare-ups in the grill. Another crucial step is making sure the grill is preheated. Having a cold grill will change the cooking time quite a bit and it will not cook as evenly.
My husband is the griller in the family, so he took over from here. The corn cooked for about 15 minutes, and it was rotated about every 5 minutes (so twice in the cooking process). If you are looking for very soft corn, you’ll want to grill it for about 20 minutes.
When it comes off the grill, it’s ready to eat… no need for more butter, seasoning, or anything. It’s ready to go! That is what makes this recipe perfect. Yes, you can grill corn with the husks on, but then you have to take piping hot corn off the grill, shuck it, and season and butter it before eating it. This way, you get to enjoy it right away. It is delicious!
Grilled Corn on the Cob
Equipment
- Outdoor grill
Ingredients
- 3 fresh corn on the cob
- 1½ to 3 tbsp butter, unsalted
- salt
- pepper
Instructions
- Turn on the grill to preheat it to 400°. This should take about 5 minutes if the burners are set to medium.
- Tear off three large squares of aluminum foil.
- Shuck the corn. Make sure the corn is clean and ready to eat.
- Place an ear of corn on the center of each piece of aluminum foil. You may need to turn the corn at a diagonal to fit well.
- Put ½ to 1 tbsp of butter on each ear of corn, and add salt and pepper (I used about ⅛ tsp of each).
- Carefully wrap up the corn in the aluminum foil. Make sure the edges are pinched together well to prevent butter from seeping out during the grilling process.
- Place the prepared corn on the grill and allow to cook for 15 to 20 minutes with the grill lid closed. Turn the corn about every 5 minutes to get it to evenly cook.
- Remove the corn from the grill, carefully remove the aluminum foil, and enjoy!
