Years ago, when I was a new teacher, the teacher across the hall from me would always bring in baked goods to share with all of the staff at school. At first, she would just bring a plate full of treats to leave in the teachers’ lounge. Then, she began making deliveries to teachers who especially enjoyed her baked goods. I was one of those teachers, and since I was just across the hall, I sampled just about everything she baked. One day, she brought in these amazing brownies – brownies layered with chocolate chip cookies and Oreos. I could not resist asking for her recipe, which she had found online. Then, I promptly looked them up online and tried to recreate these layered brownies with my boyfriend, who is now my husband. 🙂
T and I could NOT get the recipe right. First, the recipe (along with others that I also found online) said to use an 8×8 pan… that pan was way too full and overflowed in the oven. A gross mess, for sure! Then, the baking time was outrageously wrong – our brownies were so raw and underbaked it wasn’t even funny. Even after putting the overflowing, raw brownies back in the oven for WAY longer than the recipe said, they still never fully baked and were just a nasty mess. Needless to say, I never tried to make them again… and that haunted me!
So, for our anniversary this year, I set out to conquer this recipe. The result ended up becoming Super Brownies! After giving these layered brownies a kid-friendly name ;-), I set out to fix everything that was wrong with the recipes I kept finding online… starting with a 9×13 pan! I also decided premade cookie dough and supreme brownie mix (the kind with chocolate chips in the mix) were the way to go. Of course, you could make your own chocolate chip cookie dough and brownies from scratch, but that adds quite a bit more work and baking times would significantly vary based on each recipe. So, this is a gloriously straightforward, semi-homemade recipe!
Ultimately, my experimentation was a success! My kids especially loved that they got to help with the Oreo layer too. They also enjoyed eating the Super Brownies so much (as did my husband)! I hope you love these Super Brownies as much as my family has!
Super Brownies
Ingredients
- 1 16 oz package prepared chocolate chip cookie dough (I used Pillsbury brand)
- 24 to 26 Oreos (I used regular, but any kind will work!)
- 1 box supreme brownie mix (the kind with chocolate chips added in – I used the Betty Crocker brand)
- additional ingredients needed for the brownie mix (eggs, oil, etc.)
Instructions
- Preheat the oven to 350° and spray a 9×13 pan with nonstick spray.
- Evenly press the prepared cookie dough into the prepared pan. Try to make sure there is an even layer with no holes.
- Evenly distribute the Oreos over the cookie dough. You may need to break a cookie or two to make this layer work evenly.
- In a separate bowl, prepare the brownie mix according to the directions on the box.
- Pour the prepared brownie mix over the Oreos and cookie dough in the 9×13 pan. Spread evenly to to cover the Oreos as completely as possible.
- Bake for 30 minutes, or until a toothpick comes out clean.
- Allow to cool, then cut into bars and enjoy!
