There are so many Mexican and New Mexican restaurants in the southwestern area where I live. And, Spanish rice is literally a must-have side dish with every plate at every one of those restaurants I have ever been to. The rice at some of my favorite restaurants has such a savory tomato flavor, and I have always wanted to recreate it. Recently, my children have really started to enjoy Spanish rice at our favorite restaurants too, which has made me want to do a copycat recipe even more.
So here I am sharing my family’s new favorite rice recipe! My children, especially my son, absolutely love this rice. And, what’s even better is how easy it is to make!
This rice is so straightforward and quick (everything just goes into the pot and cooks!), and you only need ingredients you probably already have in your pantry and fridge. Make sure to use the long-grain white rice, as different kinds of rice have different flavors and cook times. Tasting the Spanish rice at the end is also crucial – not only so you can ensure that the rice is tender, but to check that the flavors are just right too. You want Spanish rice to have a deep tomato taste with a buttery richness, and the subtle onion and garlic flavors perfectly compliment that!
I have made this recipe at least five or six times in the last two months (we love it so much!), and it literally tastes amazing every time! My Spanish rice goes great with tacos, enchiladas, or even my husband’s favorite nacho chicken! It is a perfect side for just about any quick weeknight meal! Easy Spanish Rice
Ingredients
- ¾ cup long grain white rice
- 1½ cups water
- 1 tbsp butter
- 1 8 oz can tomato sauce
- ¼ tsp salt
- ½ tsp onion powder
- ¼ tsp garlic powder
Instructions
- Add all of the ingredients to a medium saucepan and bring to a boil.
- Cover and turn the heat down to low (or medium-low) so it is at a simmer.
- Allow to simmer for 15 to 20 minutes, or until all the liquid is absorbed and the rice is tender. Stir a few times during the last 5 minutes or so. (Add a little more liquid if needed if all liquid is absorbed before the rice is tender.)
- Stir and do a quick taste test and add any additional salt, etc. if needed.
- Serve and enjoy!
