Oreo Krispies

I finally found an actual Rice Krispie treat my husband likes! I absolutely love homemade Rice Krispie treats, so finding one he likes too (he isn’t usually a huge fan) is a super big deal! Here’s how it happened:

We recently went to a Fall Harvest Festival nearby, and we stopped for a snack at one of the little kiosks. My husband picked a big bag of buttered popcorn to share with our kids, but a gigantic Rice Krispie treat with Oreo cookie pieces mixed into it caught my eye. I didn’t buy it at first… I kept telling myself and my husband that “no, I really don’t need that.” “Oh, I am just fine with the popcorn.”

In all reality, I was not fine! I needed that Rice Krispie treat! So, when the popcorn was almost gone, I couldn’t stand it anymore. I went up and bought that Rice Krispie treat for 6 whole dollars! It was so worth it because what followed was nothing short of amazing.

The first bite was sooooo good! After a few bites, sharing with my kids, and after asking if my husband if he wanted any, T finally tried it. He loved it and ate almost as much of it as I did! That is saying something too, because he seriously doesn’t like Rice Krispie treats. I vowed then and there that I would recreate this delicious Oreo Rice Krispie treat!

The result is the recipe I am sharing with you today. It is not your basic Rice Krispie treat. I used my Oreo O’s Treats recipe as a guide, but this bar is completely different from that one (both are really good recipes, though!).

You start with crushed Oreos – lots of them! – and Rice Krispies cereal. I highly recommend using the name brands for both of these, as it really can change the flavor and texture.

Melt yummy marshmallows and butter, along with vanilla extract. Mix the melted marshmallows with the other ingredients in a giant bowl. (You really do want to use a very big bowl for this – it makes mixing so much easier!)

Spread the mixture on a sheet pan (you can make them in a 9×13 pan but they will be super thick), and allow to cool completely.

Cut into large squares and devour them!

One really amazing thing about these Oreo Krispies is that they taste so delicious up to 3 and 4 days later, so they are a great make-ahead treat! Just be sure to store them in an airtight container.

I hope your family devours these as much as my family does! Enjoy!

Ingredients

  • 20 oz marshmallows
  • 8 tbsp butter
  • ½ tsp vanilla extract
  • ¼-½ tsp almond extract
  • 8 cups Rice Krispies cereal
  • 36 Oreo cookies, coarsely crushed/chopped

Instructions

  • Melt the marshmallows and butter in a medium/large saucepan on medium heat. Stir occasionally at first, but then watch closely as the marshmallows begin to melt. You do not want this to burn.
  • After the marshmallows are melted, turn off the heat and add the vanilla and almond extracts. Stir to combine well.
  • In a very large bowl, gently combine the Rice Krispies and Oreos.
  • Then, add the melted marshmallow mixture to the cereal and Oreos in the large bowl. Mix well.
  • Allow the mixture to cool slightly, or for about 5 minutes.
  • Meanwhile, liberally spray a sheet pan with nonstick spray.
  • Pour the Rick Krispies mixture onto the sheet pan and press it gently into the sheet pan, spreading it evenly. Do not press so hard as to crush the cereal, but just enough to shape it into the pan. (Spray a little nonstick spray on your hands if the mixture keeps sticking to your hands.)
  • Allow to cool for an hour or two before cutting into bars.
  • Store in a fully sealed container.

Notes

You can use a 9×13 pan instead of a sheet pan, but the treats will be very thick.
You can also half the recipe using a 9×13 pan, or a 7×11 pan for thicker treats.
Oreo Thins also work great for this – use an entire 10 oz package, or about 40 oreos.
