Toffee Blondies

I love sweet treats of any kind, but sweet baked goods are by far my favorite. I particularly love bars – they have all the wonderful qualities of cookies without all the work. I can make a whole plate of goodies from just one bowl and one baking pan.

Blondies are one of my favorite bars to make. They are an easy and delicious cookie-like treat that have all the yummy qualities of chocolate chip cookies. I always seem to be changing up my “extras” in blondies – sometimes I add a whole variety of chocolate chips, other times I add nuts, and so on.

The most important ingredient in this particular recipe is the toffee bits. They can sometimes be hard to find in stores, but toffee bits are readily available online and I have noticed stores where I live carry them more often around the holiday season. I also use mini semi-sweet chocolate chips in this recipe because they blend so well with the toffee bits. Mini chocolate chips also aren’t quite as overpowering as regular chocolate chips can sometimes be. There is a ton of toffee and chocolate in every bite of these bars!

These blondies have a crispy and buttery exterior, but a super soft middle that’s full of chocolatey toffee flavor. I hope you and your family enjoy these as much as my family does!

Toffee Blondies

These blondies have a buttery, crispy crust with a deliciously chewy chocolate and toffee-filled center. You will want to make these easy bars again and again!

Ingredients

  • ¾ cup light brown sugar, packed
  • ½ cup sugar
  • ¾ cup unsalted butter, softened
  • 2 eggs
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups all-purpose flour
  • 1 cup toffee bits
  • 1 cup mini semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350° and spray a 9×13 pan generously with nonstick spray.
  • In a large bowl, cream the sugars and softened butter.
  • Add the two eggs, and mix well.
  • Add the baking soda, salt, and flour. Mix until just blended.
  • Add the toffee bits and chocolate chips, stirring to combine fully.
  • Spread the blondie mixture evenly into the prepared pan.
  • Bake for 30 minutes, until the blondies are golden brown.
  • Allow the blondies to cool completely and cut into 32 bars. Enjoy!
