Hello! I am so excited to begin this blog adventure. I thought I would start with one of my most simple and easy recipes – tomato chicken.
Let me first say how much I don’t like tomatoes… at least I didn’t enjoy them until I experienced pregnancy for the first time almost two years ago. (That’s a story for another time, though!) I feel like this recipe brings out all of the flavors we enjoy in tomatoes, not unlike marinara in a classic Italian dish. The tomatoes cook down into a wonderfully savory sauce that compliments the chicken very well. This recipe can appeal to the tomato-lovers and the tomato-haters out there.
My mom used to make this for me and my brothers when we were younger, and I have been making it for my own family too. It only requires three basic ingredients (how easy it that?) and it takes minimal effort to prepare on a busy morning or early afternoon. The fact that you just put everything in the slow cooker and and it does all the rest of the work for you makes it even easier!
Tomato Chicken
Equipment
- Slow cooker
Ingredients
- 2 chicken breasts, cut into halves or thirds
- 1 packet onion soup mix
- 1 14.5 oz. can diced tomatoes (do not drain)
Instructions
- Spray the slow cooker with non-stick spray.
- Place the chicken breasts into the slow cooker.
- Sprinkle the packet of onion soup mix over the chicken.
- Pour the diced tomatoes over the chicken and soup mix.
- Place the lid on the slow cooker and cook the chicken for 3 to 4 hours on high or for 6 to 8 hours on low.
- Serve the chicken over rice.
Notes
- Slow cooker liners are great for making the clean-up process faster and easier.
- You can substitute a can of stewed tomatoes for the diced tomatoes, as well. The resulting flavor is a little different, but it is still very good!
- Cooking the chicken on low produces much more tender chicken.
- Doubling and tripling this recipe works very well.
